The Best Rich, Creamy And Light Homemade Vegan Cesar Sauce

I prefer a lighter dressing for every day, but the best rich, creamy, and soft vegan Caesar sauce is one of my favourite special occasions. Caesar sauce is one of the most popular and sold globally; it is very creamy, has many flavours, and makes even people who do not like green eat salads.

Some time ago, I shared a vegetarian version of this sauce on the blog (the original has anchovies), and I remember a vegan boy asked me how he could make a vegan version. 

At that time, I thought it would be almost impossible to organise it because I did not know how to substitute the egg and Parmesan cheese. Still, if I have learned something since I am vegan, no recipe cannot be organised, no matter how difficult it may seem. 

Best of all, generally, the vegan version tends to be even more decadent, or it seems to me.

I suppose there will be more ways to organise this sauce, but I love this combination of ingredients. I have improved the vegetarian recipe that I made before, substituting ingredients and adjusting the quantities. It is healthier, lighter, has no cholesterol and is more affluent.

To replace the egg, I have used flax or linseed seeds; they do not add flavour and have a similar consistency; also, they are perfect for our health. Instead of traditional Parmesan cheese, I have used vegan Parmesan cheese.Also Read: Healthy Vegan Greek Salad Recipe With Feta Tofu Cheese

To make the vegan Parmesan, I use cashews, although you can use other nuts. If you are too lazy to make this cheese, try adding a little nutritional yeast or brewer's yeast, a cheese-like flavour. Add it little by little until the sauce has the perfect flavour for you.


How To Make Vegan Cesar Sauce

And voila, vegan recipe! I have used extra virgin olive oil instead of sunflower oil; it has a more robust flavour, but I like it a lot and is healthier. You don't have to use olive oil but always use oils that are not refined. Unfortunately, the sunflower oil sold in supermarkets is almost always refined.

The Best Rich Vegan Caesar Salad Recipe (Delicious)

On the last day, I shared the recipe for chickpea croutons that I used to make the delicious Caesar salad you can see in the photo above. The next day I will teach you how to prepare it; it is straightforward. You only need croutons (you can also use store-bought croutons, although they are less healthy), the best rich, creamy and light vegan Caesar saucevegan Parmesan, lettuce and tofu (to replace the chicken), nothing more.

Ingredients SCALE (1x)

  • One tablespoon of flax or linseed seeds + 3 tablespoons of water
  • One clove garlic
  • Two pickles in vinegar
  • Eight tablespoons vegan Parmesan cheese *
  • Six tablespoons of extra virgin olive oil
  • One tablespoon lemon juice
  • One tablespoon soy sauce or tamari
  • One tablespoon of Modena vinegar
  • One teaspoon mustard
  • Pepper to taste
  • Salt to taste (optional)

Ingredients SCALE (2x)

  • Two tablespoons of flax or linseed seeds + 6 tablespoons of water
  • Two cloves of garlic
  • Four pickles in vinegar
  • 16 tablespoons vegan Parmesan cheese *
  • 12 tablespoons of extra virgin olive oil
  • Two tablespoon lemon juice
  • Two tablespoon soy sauce or tamari
  • Two tablespoons balsamic vinegar
  • Two teaspoon mustard
  • Pepper to taste
  • Salt to taste (optional)

Ingredients SCALE (3x)

  • Three tablespoons of flax or linseed seeds + 9 tablespoons of water
  • Three cloves of garlic
  • Six pickles in vinegar
  • 24 tablespoons vegan Parmesan cheese *
  • 18 tablespoons of extra virgin olive oil
  • Three tablespoon lemon juice
  • Three tablespoon soy sauce or tamari
  • Three tablespoons balsamic vinegar
  • Three teaspoon mustard
  • Pepper to taste
  • Salt to taste (optional)

Instructions

  1. Add the flax seeds and water to the blender. Beat and let it rest for about 5 minutes.
  2. Add the rest of the ingredients and beat again until they are completely integrated.
  3. Store the sauce in the fridge.

* If you do not want to prepare vegan Parmesan cheese, you can substitute it for nutritional yeast or brewer's yeast. Add it little by little until the sauce has the perfect flavour for you.
