how to find the day of week using a query in marketing cloud

I need to send a journey email on the Monday after the subscription date.I'm trying to populate the Data Extension with the date that I want the email to send.  For example if the subscriber signs up on Monday, I want the field "Send Date" to populate with the Monday a week later.  But if the subscriber signs up on Tuesday, I also want the "Send Date" to be that same Monday, and the same goes for Wednesday through Sunday.Is there a query I can use in Marketing Cloud to generate this date?Thanks for your help.
